....so I have a few beginner questions - 3 of my 5 seeds have sprouted - so I have to figure out what to do with my seedlings soon.
- am I too late to be growing these? (I'm not entering any contests)
- now that I have seedlings what should I do next? (what kind of soil should I put them in? when and how do I add the manure in? what kind of manure? I have access to someone's rabbit or cow manure.... do I need to worry about buts or animals or anything in particular? can I just plant it in a patch of dirt where I pull away some sod? how often do I fertilize? )
hmmm....so many questions.
please give me a rundown of what to do!

probably sitting in sand..load up with manure and organics and put em out on that hole...then keep following the vine with the same...way to late for a whole program but plenty of time for a pumpkin...turn the sod over and under the maure. GrowEmBig! Chuck

this is only my second yr growing Giant's...so im no expert by any means.
Do you know what seeds you have? what do you have them growing in now? and how long have they been growing in what they are growing in?(1 leaf, 2 leafs?)
and to answer your Q's..
not to late for growing pumpkin
dig a hole in the ground 3ft wide...3ft deep fill it with good soil,compost,manure,whatever you feel will grow something well
you will need to worry about EVERYTHING..animals especially!
you will need to clear an area for your plant to grow for sure(it will grow in grass...but not suggested)
What I would suggest is just put it in the ground and read read read as much as you can to try and get the knowledge you will need to GROW THAT BIG ONE!
like what feeding schedule to put them on, how often to water and how much, learn what music it likes, definatly have to talk to it EVERYDAY!....etc...
Atlantic Giants take up approx. I think it is..2600sq.ft. PER/PLANT or if space is limited then you will need to learn what design to prune, pollinate only on the main vine...etc.
LOTS TO LEARN now that you have entered the realm of the Giant.
There are some good books out there....I would suggest purchasing HOW TO GROW ATLANTIC GIANT PUMPKINS(I,II,III)if you are interested in pursuing this hobby.
This site will probably be your next best-friend for the next few months...I read it religously daily.
If you have a question...try the site-search and usually the question has already been asked...but people here are very-helpfull so dont be afraid to ask away!
If you look in peoples diary's usually it will show and tell what they have done that yr to prepare there patch for the hopes of the big one.
