The best way to determine whats going on with your compost nutrient levels is to have it tested when it's finished. If you keep a log of what has gone in, and how much, you should be able to get an idea of what to mix into future piles. As for a list of materials and their associated nutrient levels, I have no idea. I believe that a good variety of ingredients should give you some well balanced compost with a neutral to slightly acidic pH. Like I said, the best thing to do is to simply have it tested as you would a soil sample.
