The pumpkins I have that are growing have very smooth skin, hardly no ridges. Other than the pumpkin I call Lumpy, who makes up for the lack of ridges in the others! Will these pumpkins develop ridges?

As your pumpkins age and mature they will develop these "ridges". The idea here is to keep this from happening as long as possible. That is one of the reasons that we cover the fruit up to avoid sun exposure.
