I have one plant that has produced two pumkins that have a clear/brown waterey liquid weeping out of the skin on the exposed side. This water dries on the surface and leave a skin/scab. It is coming out of a large area, not just a rib. I am worried that this will be a weak spot for a later split. Unfortunately, this is occuring to my first choice fruit for a september fair. What is this? Is is associated with sun exposure (I have not shaded it yet.)

If it's above the leaves you have to shade it. Pumpkin's weeping is normal and actually looks like sweat or tears. Keeping the skin as supple as possible to avoid large cracks and splits.
