I forget who gave this recipe to me, but it's good.

The crust

- 30 gingerbread (snap type) cookies
- 1 cup of nuts (pecan)
- 1/4 cup of sugar
- 1/4 cup of melted butter

1. pre-heat the oven at 350°
2. reduce the cookies to crumbs (careful not to bang your thumb with the hammer)
3. mix in the nuts, sugar and melted butter
4. press the mix into a 9" pie mold (bottom and sides)
5. bake in preheated oven (350°) for 15 minutes.

The filling

- 1 3/4 cups of pureed pumpkin
- 1/2 cup maple syrup
- 1 tea spoon of grated nutmeg
- 1 tea spoon of lemon zest
- 1 table spoon of grated fresh ginger
- 1 tea spoon of maple extract (optional)
- 16 ounces of gelatine
- 2 table spoons of cold water
- 1 1/4 cups of boiling water
- 1 3/4 cups of 35% whipping cream

1. Mix the pured pumpkin, maple syrop, nutmeg, lemon zest, ginger and maple extract.
2. Prepare the gelatine using the cold water.
3. Whip the cream until firm and refrigerate
4. Pour the boiling water on the prepared gelatine.
5. Pour the liquide gelatine into the pureed pumpkin mix.
6. Slowly mix the pumpkin mixture to the whipped cream.
7. Pour the mixture onto the pie crust and refrigerate for at least 4 hours.

Top the pie with whipped cream.

This link tells you how to make your own pumpkin puree. http://www.pumpkinnook.com/cookbook/puree.htm

I like my pumpkin pie recipe which I will post soon, I sent it to Ken and John for the recipe page here at BP.com. I don't know about a pumpkin recipe calling for gelatin. If you try the above recipe or even just the crust, the best way to make crumbs out of ginger snaps is to put them in a bag, and roll them with a rolling pin.
