I have been using my current patch for about 5 years and have been thinking about "resting" part of it on a rotating basis for a year or maybe even just taking a year off pretty soon.

What would be the best cover crop to plant for one season that would be most beneficial for the soil? I would be happy to till it in and replant several times during the year. Would a nitrogen fixing legume be best? Are there any cover crops that would add more organic matter (maybe something that just grows really fast and large)? Would it be best to use a mixture of several things? Thanks.

Buckwheat planted and tilled every 40 days Jim. Nothing will add more organic matter. Other wise if your looking for a legume soybeans scattered and tilled before they go to seed.
