How soon before a fair do you cut the pumpkin from the vine???????

you want to leave it on the vine as long as you can. (unless the plant has die or something like that)
once it is cut- it starts drying out and losing weight. g1t

So the day before will be ok then,,, Didnt know if stem needed to be cured when it is entered..

The stem doesn't need to be cured. most of the heavy hitters cut vine like 2-4 ft on both sides of the pumpkin. then they stick the cut ends into a 1 gallon milk jug full of water. Then right before the weighoff they cut the vine down - to the maximum allowed by the weigh-off rules.
so to answer your question- the day before would be fine.
