As sad as it is to say, in this part of Canada, frost is a possibility in a few more weeks. I know that pumpkin plants are not very hardy to cold, but when should I harvest the actuall pumpkin itself? Can it take a bit of frost? Thanks for the help.

No they can't take frost. Cover the pumpkins or remove them prior to the frost. The frost will kill the plant anyway. So you might as well take the pumpkins off first. I found that if frost hits the pumpkins they will rot much faster.

I wouldn't "throw in the towel" so fast! If the temps will only hit about 30°, then I'd start the sprinklers about three in the morning....unless you have access to smudge pots! However, if a cold front is approaching which will last several days or the temps drop near the mid twentys ....then "just pack it in!"
