I was just wondering how much of the vine should I leave uncovered around the fruit. Should I cut some of the tap roots around the fruit to allow the pumpkin to grow? I really would like to thank everyone for their help over the past few days.

you should cut the tap root by the fruit and one on either side of the fruite becasue as the pumpkin grows the vine will need to be able to lift up with the pumpkin, even putting blocks under the vine can help support the vine as the pumpkin pulls up on it.
