yes you can. What you do is collect them out of the pumpkin. Then you wash them off( make sure all the guts and stuff are off. Then get a big screen ( like a windo screen) and lay all your seeds out on it. Make sure they are not touching each other. Place a small fan next to the seeds so it's pointed at them to drie them off. lett them sit with the fan on them for a week or to until they are nice and drie....some one want to elaborete more.......(fan is optional)

3 weeks allows for the embryo to dry inside. Just because they are dry on the outside does not mean they are dry inside.

Ambient room temp of 70 to 75 degrees is good for drying. I dry mine for 2 or 3 weeks.

I add bleach 5-10% to the wash water.

Watch where you dry them. I set the screens up near the dehumidifier with a slow fan blowing on them 24-7.

Don't let the seeds touch each other or mold spots develop.

Squirrels & mice can be a problem.

Cats, kids & just plain clumsy folks can be a real issue too.

Tremor-
Cats especially-- my wife's cat loves to eat raw pumpkin seeds. I have to really guard the drying screen.

I have a couple of mold spots on a few, will that hurt the seed? Are those seeds trash now?

Most small mold spots are superficial and do not harm the seeds...if they are kept dry. I have had no problem with "moldy" seeds germinating.
