This one is much bigger than the other, it's older as well. I didn't pollinate it, but we have plenty of bees around....

Here's one that is maybe 3 days behind the first, regarding when the first flower opened....

How will I know it's pollinated, and what would happen if it wasn't?

1. Of course the most obvious answer is that it has not shrivelled up and fallen off the vine yet, but that could take 10 days to be sure

2. Second most obvious is that it is still growing, but again, it might grow for a bit before it falls off

3. Third and not obvious at all is the shine/firmness. If it stays shiny and firm its still growing, but if it become dull and mushy it didnt take

I say just let em grow, and you will know in time. If you are worried about not having enough fruit, just pollinate and cull when you are sure.

Both pics are probably too early to tell for sure. The second is way to early to tell. If I had to put money on it, I would say the first is good to go.
