I'm just about ready to plant seeds but want to make sure the space is big enough. How wide and deep should I need to dig to allow enough room for the roots? I've dug about 2 feet deep and about 5' x 5'. Is that good enough?

That sounds good for your "ground zero" area. Fill this hole with sterile potting soil and compost. This will give your seedlings a good "safe" environment for the first few weeks.
