I understand that there is rule of thumb about how many leaves a plant should have before full on pumpkin growth? How many?

100 leaves before pollination is what I have heard being mentioned as a rule...

But, Has there been anyone with a shorter main vine set with less leafs that was still able to grow a nice one?

I think the "100 leaves before pollination" was dreamed up a LONG time ago. Ever seen 100 leaves? It ain't much....

There are still many large pumpkins grown at only 10 to 12 ft. out. I don't think a plant of this size has more (big, mature) leaves at pollination time.

Somebody, can't remember who but it's a recognizable name I think, grew a sizeable fruit at 6' or so out within the last few years...just wish I could remember who.
