How big do you usually want to see your plant before pollination? In square footage.

I would say ideally ,somewhere between 145 and 500 sq ft to get one to 1000 lbs+

My 1791 Holland was 190 sq ft at pollination and it went 1614 lbs.

Nice.

Anyone have any personal preferences? I know that in the long run it wont matter that much, but I am curious to see what most people expect.

I find that Mother Nature determines that. Some years when we have super cold May and June weather, the plants are very small when they are ready to pollinate. This year we were cool but no frosts. It delayed start of pollination to July 1, but the plants are much bigger. I think 3 early shots of diluted fertilizer helped push the plants along. They are around 250-400 sq ft.
