Would Muriate of Potash be considered organic? The manager at the garden center couldn't tell me.

No. Sulfate of potash is though. 0-0-50 so watch out.
If a gentler organic is desired, you can try one of these:
Kelp Meal (1-0-2) Raw Washed Sea Weed (1-1-5) Green Sand (0-1.4-6.3) Wood Ashes (0-1.5-7) raises pH
