Case grande arizona

So I have a small patch under a mesquite tree here in southern Arizona. My son, girls and I want pumpkins for Halloween for carving and pies. I hear a lot about infrequent watering and fertilizing. Before planting I added aged cow manure, quite a bit to the soil. I also added bone meal. How and when do I fertilize. I have more manure and also fish emulsion. My seedlings just came up a few days ago and look great. I have read a little about fertilizing and to me, I don't understand some of the stuff they talk about on here. Any help is greatly appreciated. Happy fourth my fellow Americans!!!
