For a really big pumpkin do I need two plants for pollinating or can I just use one plant?

Nope one plant can be selfed...pollinating only affects the offspring of the pumpkin the following year.

You can let the bee's do it, use a flower from the same plant, or cross other genetics into it by using a flower from a differnt plant. You still need seeds with good genetics, the weather, skill.

Bees have worked for me before, but if you want as close to a guarantee you can get, better to hand pollinate early in the morning yourself. Use as many males as you can and spread the pollen around all the lobes in the flower. One plant works just fine, but you have to make sure both varieties of flowers open the same morning.
